Bagels are a staple breakfast food item. I used to buy prepackaged bagels at my local grocery store because going to a bagel shop was inconvenient and pricey. Undoubtedly, due to high preservatives, these bagels have a long shelf life. Although this means I could have them longer in my pantry, most brands don’t taste very good. So, in the end, it boiled down to convenience.

So during the 2020 quarantine, I was on the hunt for a simple bagel recipe and came across many consisting mainly of flour, Greek yogurt, baking powder, and salt. I found an easy small batch recipe on Skinny Taste. I changed the recipe slightly and have made these a dozen times. I’m guessing that the yogurt brand I used, Walmart’s Great Value, had more liquid than Skinny Taste’s choice of yogurt. Just use the non-fat Greek yogurt brand you like and remove any sitting liquid at the top before measuring out. The more liquid it has, the more sticky it will be and the more flour you need to add. I have only used my air fryer oven to make these. I am so glad I found a solution to getting fresh “bagels” on-demand – that are quick and easy to make. I would say that is pretty darn convenient.

I know these are not legitimate bagels because they are not boiled, hence the name un-bagels, but I think it is brilliant that I can randomly make a batch of these treats. It may not be a bagel, but I believe it is worth adding to your recipe cards.

Let’s get started…

Makes 4 un-bagels. Serving size 1.
Easily double up recipe to make 8 servings.

What you’ll need:
  • 1 cup of all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup plain non-fat Greek yogurt
  • 1 egg or egg whites
  • Toppings (optional): sesame seeds, cheese & jalapeno (my fave!)
  • Medium sized bowl
  • Whisk
  • Basting brush
  • Spatula
  • Scraper

Add dry ingredients to bowl: 1 cup of flour, 2 tsps. baking powder, and 1/2 teaspoon salt. Mix with a whisk to combine ingredients well.

Use a spatula to add 3/4 cup of Greek yogurt and mix well.

Continue to mix until well combined. Here you will notice if it is too sticky or too dry. If it is too dry add a teaspoon of Greek yogurt at a time and combine. If it is too sticky add 1 tblsp. of flour at a time and combine. 

Your dough is now ready.

Add flour to a clean surface and drop dough to form it into a flat disc.

Using the scraper, cut dough into four equal parts (as close as possible).

Roll it Out

Okay, this is the first way I learned and it felt time consuming. However, you might like to do it this way. You simply take each piece and roll it out.

Poke the Dough

I found that after cutting the dough, I just shape it into a ball and then poke the center. I use flour on my finger so that it doesn’t stick to the dough. I then stretch out the center to shape it into a bagel.

Use the basting brush to coat the un-bagels with egg. The egg will work as glue for your toppings. If you have an egg allergy or prefer not to use eggs, you can use a little water to help the toppings adhere. (Don’t over-drench them.)

I sprinkled sesame seeds over the egg brushed un-bagels. It’s amazing how many health benefits are in these little seeds when consumed regularly. For instance, these nutty-flavored seeds contain vitamins, minerals, and antioxidants.

These are now ready to put in the air fryer. By the way, I used a sheet with parchment paper to avoid them sticking. I have also air-fried them in the wire basket that comes with the air fryer oven.

I have a Ninja Foodi Air Fryer Oven, which I enjoy using. I’ve made all my un-bagels in this and haven’t used an actual full-size oven to make these. I set my air fryer at 285 degrees for 19 minutes.

To bake in the oven, Skinny Taste recommends an oven temperature of 375 degrees for 25 minutes.

Store Leftovers

If you have any leftovers, you can store them in the fridge for up to 3 days. I usually put them in the toaster for a couple of minutes to give them a nice toast.

That’s it!

Enjoy a fresh “baked bagel” with your favorite cream cheese or make it into a breakfast sandwich.

Sweet Un-Bagels

Okay, so on one of my Costco trips, I got a great deal on twenty Chobani fruit-flavored Greek yogurt cups. Unfortunately, not all my kids like Greek yogurt, and I don’t eat it every day. So my husband and I had plenty of yogurts to go through before they expired. Luckily, I was able to use them to make sweet un-bagels. Because I made some minor adjustments, this recipe is slightly different than the one above.

Makes 4 un-bagels. Serving size 1.

What you’ll need:
  • 1-1/4 cups of all purpose flour
  • 2 Chobani Greek yogurt cups (5.3 oz ea.)
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Save fruit at the bottom of cup
  • Medium sized bowl
  • Whisk
  • Basting brush
  • Spatula / spoon
  • Scraper

Add dry ingredients to bowl: 1-1/4 cups of flour, 2-1/2 tsps. baking powder, and 1/2 teaspoon salt. Mix with a whisk to combine ingredients well.

Use a spatula to add the two cups of Greek yogurt. Be careful not to add the fruit to the bottom of the cups; set them aside for now. If you do happen to get some, it’s okay. It may cause it to get sticky, and you may need to add some more flour.

Mix until well combined. Here you will notice if it is too sticky or too dry. If it is too dry scoop up as much yogurt left in the cup and combine. If it is too sticky add 1 tsp. of flour at a time and combine. 

Your dough is now ready.
